Spicy Spinach Rice

Total Time : 50 minutes | Prep Time : 10 minutes | Servings : 4 people



What?

1-1/2 cups Cooked rice
200 grams Spinach Leaves, rinsed and chopped
1 tsp. Cumin seeds
1 tsp. Ginger, grated
1 Tomato, pureed
1/2 tsp. Turmeric powder
1 tsp. Sambar Powder
1 tsp. Garam masala powder
2 tbsp. sesame oil
Salt to taste


How?

  1. To begin making the Spinach Rice Recipe, heat oil in a heavy bottom pan over medium heat. Add cumin seeds, grated ginger and sauté for a few seconds.
  2. Stir in the tomatoes, turmeric powder and saute until the tomatoes have softened then stir in the chopped spinach and salt, cover the pan and allow the spinach to cook until soft.
  3. Turn the heat to high and allow the extra water to evaporate then stir in the cooked rice and sambar powder and mix well.
  4. Turn the heat to low, cover the pan and simmer for a few minutes. Turn off the heat and the Spinach Rice is ready to be served.
